We start with Shiro Utsuri to describe the koi variety called Utsurimono. International Koi Judge Shawn McHenry explains this variety in great detail. Utsurimono translates as, "reflections", and truly is one of my favorite varieties of fish to keep in the pond. Although it is a popular choice for the beginners hobbiest because it looks like a "Cow Fish", it is heavily sought after and appreciated by advanced koi keepers because the black color, or "sumi", rises and falls seasonally for several years before the fish matures and finishes changing. The Shiro Utsuri is a black and white checker boarded koi that brilliantly displays the reflections as described from the translation from the Japanese word.
